Tabouli

6 lg. tomatoes
1 bunch parsley
1 c. mint leaves
1 1/2 bunch green onions
2 c. cracked wheat
3 lemons, juice
1/4 c. olive oil
Salt and cayenne pepper to taste

Directions:

Mince the parsley, mint and green onions.

Chop the tomatoes.

Cover the cracked wheat with boiling water. Let it stand 5 minutes and drain well.

Add together with olive oil, lemon juice, salt and cayenne pepper.

 

Shish Taouk - Lebanese Chicken Skewers

 

6 boneless skinless chicken breasts

3 garlic cloves, crushed

1/4cupolive oil

1 lemon, juice of

1 tablespoonpaprika

1(6 ounce)can tomato paste

1 cupyogurt

2 tablespoons sumaq

1 teaspoonsalt

2 teaspoonsblack pepper

Directions:

Cut chicken breasts into pieces for skewers.

Mix remaining ingredients together to make a marinade.

Add chicken to marinade, mix well and refrigerate in a non-reactive container from 2-8 hours.

Thread chicken on skewers and grill or cook under a broiler.
